Sour porridge with apple

A founder of Deliscake project, a young mom and cooking aficionado Elena Tyan has shared her recipe for cooking millet porridge. Lena makes her porridge with pine nuts milk and tops it with fruits. Millet porridge per se is really good for you: it benefits the cardiac system, activates metabolism, extricates toxins and helps fighting fatigue and stress. In a combo with pine nuts milk, fruits and berries, this porridge will be a delicious and hearty start of a day! Besides this recipe works perfectly for vegetarians.

For 4 servings you will need:

− 15 gr butter or 1 tbsp. vegetable oil
− 2 medium sized apple
− 40 gr dried cranberries or raisins
− 50 gr sugar
− ½ tsp. cinnamon
− a pinch of salt
− 200 gr millet grain
− 500 ml water
− 250 ml pine nuts

1. Melt the butter on medium heat in a saucepan or a small pot. Add diced apple, cranberries or raisins, half of the sugar, cinnamon and salt. Cook until apples become soft, about 5-10 min. Put out apples and berries into a bowl.

2. Pour water and pine nuts into a saucepan and bring to a boil. Rinse the grain and pour into the boiling liquid. Reduce heat, cover and simmer for about 20 min. If necessary, add more hot water and cook for a little longer.

3. When the porridge is ready, stir in apples with cranberries, add sugar to taste and combine. Plate it and it's ready to go.
