Gazpacho with sun-dried tomatoes
Quick and easy to make gazpacho actualizes during hot summers, when markets and stores start selling the most delicious tomatoes and herbs. This cold Spanish soup can be cooked in a lot of ways. Olya Malysheva, who writes for Salatshop blog, suggests that we try an unusual mix of juicy tomatoes, sweet strawberry and sun-dried tomatoes, altogether making a fresh, mouthwatering summer soup.

For 2-3 servings you will need:
3 large tomatoes
1 medium sized sweet red pepper
1 medium cucumber (peeled)
1/3 cup sun-dried tomatoes
½ lemon juice
2 cloves of garlic
½ tsp red pepper
½ tsp salt
arugula or basil for garnish and smell
Chop tomatoes and pepper, place them in a blender together with strawberries, garlic, peeled cucumber and lemon juice. Add 1/3 cup of sun-dried tomatoes, ½ teaspoon of paprika and salt. Mix well to a homogeneous condition. Divide between bowls and serve with a garnish of arugula or basil.
